Preparing for #4 - Freezer Meals

It was totally an average trip to the grocery store turned major nesting episode. What can I say chicken was on sale, one thing led to another and by the time Caleb got home at around 6pm he looked at me and said “you haven’t left the kitchen all day-have you?” Needless to say I made over 20 meals, Caleb’s brother and his wife brought pizza over for dinner so I could finally leave the kitchen and I slept very well that night.

This one I pinned on Pinterest from other pinners three times before realizing I had already pinned it-it looked that delicious! Funny thing is I never looked at the recipe until after I'd made it once just wingin' it, and I made it almost exactly like the recipe.

Venison Kebabs x2
We got the kebab marinade recipe from a friend and it's amazing. You can use beef but we have a lot of deer meat with all the hunters in the family. Caleb said it's the best way we've ever prepared any of the venison. 

Smoky Mountain Chicken Tenders x2
This is my own recipe based off a dish I had at a restaurant a long time ago. the restaurant no longer exists but we still enjoy this meal often, one of Caleb's favorites.

Pulled Pork x2
As far as freezer meals go, I kinda cheated on this one. We had smoked some pork shoulder for Jacob's birthday and I just froze the leftovers, for pulled pork sandwiches later, and I'm glad I did!

Here are a few tips for coming up with your own meals:
  • Casseroles freeze well-next time you make one double the recipe and freeze the second for later.
  • Any meat you plan on marinating can be frozen in the marinade often times with additional ingredients such as veggies.
  • Soups freeze well-again double your recipe and freeze the second half for later
  • Purchase aluminum trays of all sorts and sizes at the dollar store.
Now I’m sure a few of you are wondering the recipe for some of these and don’t worry I’m going to tell you, but not all in one post, so as I post each recipe I’ll link it back to this post so you’ll be able to click on the link for the recipe and I’ve gone ahead and posted a couple recipes already so you don’t have to wait for them now that I’ve made you hungry ;-) 
So you want to know what I made? Of course you do! So without further ado here is a list of what I made. Now some of these are no brainers as they freeze well and anyone who cooks knows this, but this is my list (plus how many of each I made just in case you wonder how I got over 20 meals J)

Chicken Enchiladas x2
I prefer my mom's recipe, a cream style version rather than with a red sauce. Make it simple by using a rotisserie chicken. 

Turkey Divan x2
I love this casserole! You can also use chicken but I usually have frozen turkey just for things like this  through out the year.

Southwest Chicken Soup x3
My own recipe and very flexible, but again you could always use a rotisserie chicken for this. I actually had some leftover frozen chicken we had BBQ'd which suits the flavor of the soup well.
